AFTER more than 30 years in teaching Trina McQueen is nowadays serving up dishes that score top marks on the palate and in the pocket.

The Blackbrook woman admits she loved her time working at St Cuthbert’s and Sutton High schools and at St Augustine’s, where she taught for 32 years, educating pupils in the art of food technology and the practicalities of home economics and needlework.

She’s still passing on her knowledge but these days she’s involved with the Let’s Get Cooking project backed by Merseyside Recycling Science which is all about reducing food waste.

“We tend to make too much mashed potato and too much boiled rice but instead of throwing the excess away we can create other tasty dishes from leftovers, reducing wastage and saving money,” explained Trina, who last week shared her thrifty recipes with 28 members of the mothers’ union at St Oswald’s Church hall, Winwick.
